..........The fresh root has
a delicate flavor that is simply exquisite - fuller, subtly
more complex and much more pleasant than the dried or powdered
varieties. Look for it in Asian markets, or specialty produce
markets that carry a wide range of ethnic ingredients. If you
are not able to find it fresh, substitute with a fresh batch
of turmeric powder. Use approximately half teaspoon for
each one-inch piece (or generous minced teaspoon) of fresh
turmeric; often, you will need to add a little sugar to
the sauce to bring forth its flavor.
..........Turmeric
(kamin) : Unlike other members of the ginger family used
in Thai cooking, fresh turmeric is pleasantly mild and does
not have a sharp bite. On the other hand, it has a very loud
color - deeply orange inside an orange-tinged beige-brown skin.
When added to foods, its carrot orange actually imparts a bright
yellow color. The pretty color and delicate flavor of fresh
turmeric is extensively used in curries, soups, stir-fried
dishes, fried foods, snacks and desserts.
..........Turmeric is much
smaller than ginger, the fleshy root composed of a fat cylindrical
rhizome tapered on both ends, from whose sides branch two opposite
rows of short, slender fingerlike appendages from one to three
inches in length. Growing both straight or curved, smooth or
knobby and gnarly, the "fingers" break easily from
the parent root and are more often found in markets as unattached
members.

Sweet Mango with Sticky Rice Dessert " is almost out
of the season. Sweet Mango and Sticky Rice Dessert is a traditional
Thai desert featuring a delight contrast; in exotic flavors between
the sweetness of the coconut milk and the sweet mango. Serve warm
and topped with lightly toasted Mung beans. YUM!!!

Kao Soi ", Northern Style Thai Noodle, is one of the
favorite dishes of curry lovers. It is a steamed egg noodle
with your choice of chicken or beef in curry sauce on the top
of bedded bean sprouts. Sprinkle with green onion and crispy
noodle. Sided with fresh onion, bean sprouts and pickle green
mustard.

Thailand? Let's go to Ubon Ratchathani, the largest of
Northeast Thailand. It is the boarders Laos and Cambodia, the juncture
of the three countries's being dubbed in recent times "The
Emerald Triangle" on account of the areas lush forest cover.
The provinces main topographical feature; however, is the Moon river
and its junction with the Mekong, the latter forming much of Ubon
Ratchathani's eastern board. The meeting of the two rivers affords
some most picturesque scenery, while prehistoric rock paintings
at the nearby cliff of Pha Taem add to the area's fascination. Overall,
the province is a showcase for traditional I-san culture, most readily
seen in such colorful annual events as the Candle Festival, which
celebrates the start of the Buddhist Rains Retreat.
